You can also switch between color and black and white using the keyboard shortcuts

B&W = Ctrl+B and Color = Ctrl+C

You can access the list of keyboard shortcuts in your Controls tab.

You can also add a touch screen button to apply the effect. If you want it to always start in color, the best option is to set the start button to "Color+ Start Session" rather than just "Start".  That way even if it accidentally gets an effect applied it will always switch back before it starts the session.
